Sushi terminology

There are various technical terms used when referring to sushi.

“Shari” (シャリ)
Fine white sushi rice is said to look similar to Buddha’s ashes (仏舎利/Busshari) and came to be called shari because of this.

“Gari” (ガリ)
Ginger, pickled in sweet vinegar, gari comes from the word garigari which means crunchy in Japanese. Ginger has the property of holding down the increase of bacterium.

“Agari” (アガリ)

 In order to clean the aftertaste left from the sushi, tea is served at the end of the meal (agari). The name agari stuck, and refers to the tea which comes after eating sushi.
